Cheesy Oven-Baked Breakfast Hashbrowns

I'm always looking for simple recipes using food items I always have around the house. This cheesy oven-baked hashbrown recipe has very few ingredients and requires very little prep. Perfect for a busy weekend morning or even a last minute holiday breakfast!

Ingredients
  

  • 1 lb bag of frozen hashbrowns unseasoned
  • 1 cup sharp cheddar cheese shredded
  • 1/2 yellow onion cut in thirds and sliced thin
  • 3 tbsp butter melted
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 3 tbsp olive oil (if hashbrowns are still frozen)

Instructions
 

  • Preheat oven to 425 degrees.
  • In a large bowl, combine frozen hashbrowns, sliced onions, melted butter, salt, pepper, and garlic powder. Stir to combine (It's okay if the melted butter gets cold again from frozen hashbrowns)
  • Add cheese to hashbrown mixture and stir to combine again.
  • Line baking sheet with foil (or a silicone baking liner for a guaranteed nonstick result)
  • Pour hashbrown mixture onto lined baking sheet.
  • Drizzle with olive oil and bake for 35-40 minutes.

Notes

*If hashbrowns have been thawed ahead of time, cut the baking time in half.
