Cut all three pineapples into slices or chunks and place in large jug (one with a spout if possible)
Pour the vodka of your choice over the pineapple chunks (I use Tito's)*Don't forget to save the bottle for later
Let vodka soak in the pineapple for 14 days
Strain the vodka out of the pineapple and back into the original vodka bottle or into any bottle of your choosing.*Do NOT eat the pineapple pieces (trust me, it's disgusting)
Let pineapple sit in a collander to strain out remaining vodka*Don't skip this step, you can get quite a bit of extra vodka out
Enjoy as a martini or try it out in one of the cocktail recipes below

1 jalapeno
cilantro
San Pellegrino (or soda water)

Muddle 1 slice of jalapeno and 2 leaves of cilantro with a splash of the pineapple vodka at the bottom of a cocktail shaker.Add 2.5 ounces of the homemade pineapple infused vodka.Add ice and shake.Pour in a glass full of ice and top with a splash of San Pellegrino or soda water.Garnish with 1 slice of jalapeno (halved) and 2 cilantro leaves.Pineapple Sunset
fresh squeezed orange juice
maraschino cherry juice
San Pellegrino (or soda water)
homemade pineapple infused vodka
Pour 2.5 ounces of homemade pineapple infused vodka into glass with ice.Add 2 ounces of fresh squeezed orange juice, a splash of maraschino cherry juice, and a splash of soda water.Stir and garnish with an orange slice and a maraschino cherry.
